Stuffed Bell Peppers


Looking for an easy way to spice things up at dinner time? Look no further! Here is a fun and simple way to incorporate meat, veggies and whole grains--and sure to be a hit! Yield= 4 servings Prep Time= 20min | Cook Time= 45 min| Total time= 65min

Here’s what you’ll need:

4 bell peppers 1 ½ cup extra lean ground beef

1cup rice

¾ cup tomato paste

½ cup peas 1 tomato

½ cup corn

¼ cup chopped mushrooms

Here’s what you do:

  1. Preheat the oven to 475F.

  2. In a frying pan cook the ground beef on med-high heat until brown.

  3. Boil one cup of water in a pot. Once boiled, add 1 cup of rice. Cook for

8-10 minutes on high, stir frequently.

  1. Filling- In a mixing bowl add & stir: ground beef, rice, tomato paste, peas, tomato, corn and chopped mushrooms.

  2. Cut off the tops of the bell peppers and empty the seeds.

  3. Scoop the filling into the empty bell peppers.

  4. Place the stuffed peppers on a baking pan.

  5. Cook for 45 minutes.
