Healthy Bacon Pizza

Remember that US Senator that claimed pizza was a vegetable a few years ago?

Well, now he isn’t so wrong! Try out this delicious veggie-based pizza. Bonus- the crust is made from eggplant, a delicious in-season vegetable full of folacin and potassium.

Here's what you'll need:

Crust

1 eggplant

¼ almond flour

1 egg

1tsp extra-virgin olive oil

Salt and pepper to taste

Topping

1 onion

4 mushrooms

1 small green pepper

1 small red pepper

5 pieces of bacon

½ cup finely chopped broccoli

Here's what you do:

  1. Preheat oven to 350F.

  2. Peel eggplant and then grate eggplant on cheese grater.

  3. Squeeze grated eggplant in a paper towel to remove the excess liquid.

  4. Mix eggplant in mixing bowl with flour, 1 egg, olive oil and salt and pepper.

  5. Spread batter over parchment paper-lined baking sheet, about 1/8 ‘’ thick.

  6. Bake crust for 30-35min.

  7. While the crust is baking, finely chop up the veggies and bacon.

  8. Remove the crust from the oven, lightly grease another parchment paper with olive oil to place on top of the crust to flip the crust over.

  9. Brush the flipped side lightly with oil.

  10. Bake opposite sides for 15 minutes.

  11. Add the toppings and spices.

  12. Bake for an additional 7-10 minutes and then serve.
