June Grilling: [Vegan, GF] Pakora Burger

Looking to try something new and add some more veggies to your diet? Try the Pakora Burger. This vegan [AND gluten-free] burger will hit the spot while offering the satisfying, flavourful and juicy-fill of regular burger. Prep time: 30 min | Cook time: 10 min
Here’s what you’ll need:
3.5 oz fast-cooking potatoes
3.5 oz broccoli
3 oz Chickpea flour
1 tsp turmeric
1 tsp chili powder
1.2 tsp cumin
Salt and Freshly ground pepper to taste
2 tbsp coconut or olive oil
4 Chinese cabbage leaves
½ Bunch of flat-leaf parsley
2 Large pieces of lettuce for buns or [vegan/ gluten] free burger buns
Peanut butter or vegan burger sauce, to serve
Here’s what you do:
Peel the potatoes and grate them into a bowl.
Wash the broccoli, chop in a food processor and mix with the potatoes.
Mix the chickpea flour and spices with 3.5oz lukewarm water. Season with salt and pepper.
Stir the potato and broccoli into the batter.
Shape the paste into two patties.
Heat the coconut oil (or olive oil) in a frying pan and fry the patties on both side until golden.
Wash and shake dry the Chinese cabbage and the parsley.
Cut the Chinese cabbage into strips and remove the stems from the parsley.
Cut the lettuce or gluten free buns in half across the middle and spread the peanut butter or burger sauce on the inside of both halves.
Cover the bottom half of each lettuce or gluten free bun with a small handful of Chinese cabbage strips and parsley.
Place the pakora patties on top, cove with the top half of the buns and ENJOY.
