Recipe of the month: Peach Pockets

Finally, peach season is upon us!

On their own, peaches are such a perfect fruit: sweet, succulent, wholesome, fuzzy. They’re so delicious that we’ll still eat them despite knowing that its wonderfully satisfying juice is going to make a sticky mess EVERYWHERE.

Yet, add some cinnamon, raisins and a few other choice ingredients, and we think that we’ve made the peach taste even BETTER-- who thought that would be possible? But hey, don’t take our word for it, try it out for yourself-- it only takes 15 minutes!

Here’s what you’ll need:

4 peaches

1/4 cup of raisins

8 tsp of coconut oil

1 tbsp of honey

cinnamon

Here’s what you do:

  1. Preheat the oven to 350°F.

  2. Cut the peaches in halves with a knife. Removes pits.

  3. Coat the entirety of each peach half with 1 tsp of coconut oil.

  4. Place peaches with pitted side facing up on a cookie sheet lined with parchment paper.

  5. Add a pinch of cinnamon to each peach top.

  6. Add a spoonful of raisins on top of each peach half.

  7. Drizzle with honey.

  8. Place peaches into the oven for 10-15 minutes or until soft and golden brown.

  9. ENJOY!
