Mango Coconut Tofu Bowl

When Natalie (our July TriForcer Spotlight) cooks, you SAVOUR. 

 

 

Seriously, she always has the most amazing sounding dishes and this one is no exception. We dare you to try it out!

 

There are 4 parts to this delicious dish. Here's what you'll need for each:

 

Servings: 4 | Prep & cook time: ~40 min 

 

SAVORY COCONUT RICE

1.5 cups uncooked jasmine or basmati rice
1 clove garlic, minced

3/4 tsp salt

13.5 oz. can coconut milk

1 cup water

 

HONEY LIME GLAZE

1 fresh lime

1/4 cup honey or agave

1/2 Tbsp soy sauce

1 tsp corn starch

 

PAN FRIED TOFU

14 oz. package firm or extra firm tofu

Pinch of salt

2 Tbsp corn starch

2 Tbsp neutral oil for frying
