Heather's Vegan Bean Patties

One of our kicka$$ members, Heather, has just the delicious dish for you: Vegan Black Bean Patties. Take it over Heather!
This is a versatile recipe in that you can throw pretty much anything you want into it. If you like more of something, then add more of that ingredient; you can use any kind of beans; and you can easily substitute. For example, if you don't have a kale, swap for spinach, or if you don't have curry, add chili powder instead. Depending on the spicing I will change the sauce on top as well. Same goes for quantity, I use these amounts because I like to get 2 lunches and 2 suppers out of it.
Yield: 16-20 patties | Total Time: 30 minutes
Here's what you need:
1 can lentils (540mL)
1 can black beans (540mL)
6 slices whole grain bread, cubed *
4 handfuls crushed croutons *
1 large onion, diced
1/4 to 1/3 cup sundried tomatoes, diced
1 to 1 1/2 cups kale, chopped
Curry, salt, and pepper, added to your taste
1-3 tbsp ooking oil (whatever you use)
1 tbsp Ketchup per patty -- YUM
* you can also substitute this out for a flour of choice if you have other allergies
Here's what you do:
Preheat oven to 400oC
In a large mixing bowl add beans and crush (I use a potato masher) until there are pretty much no more whole beans…a few beans can remain whole.
Add spices, curry and pepper to your taste, and pinch or two of salt. Sprinkle with oil to moisten bean mixture.
Add onion and sundried tomatoes, stir until mixed, then add kale and stir again until combined.
Add crushed croutons, stir until mixed. Sprinkle with more oil if mixture needs to be moister.
Add cubed bread crumbs; stir as best you can then use hands to really combine all ingredients.
Form into patties…whatever size you like.
Arrange patties onto a greased cooking sheet.
Top patties with a dollop of ketchup, spread evenly over the patty.
Put into preheated oven and cook until browned and ketchup is caramelized, about 10-15 minutes.
